- In una padella versare l' olio e.v.o. e far rosolare l'aglio, eliminarlo ed aggiungere i pomodori tagliati a pezzettini, sale, origano, basilico e far cuocere versare le melanzane fritte e far insaporire.
- Cuocere la pasta in abbondante acqua salate, scolare al dente e versare direttamente nella padella delle melanzane aggiungere la provola tagliata a cubetti, il parmigiano, il basilico, il sale e far saltare un attimo in padella.
- Sistemare i gusci delle melanzane sulla teglia da forno, ricoperta di carta da forno, bagnata e strizzata, mettere il parmigiano e poi versare la pasta, fino a riempirli passarli in forno per 10 minuti circa a 180°, il tempo di far sciogliere la provola.
- Impiattare e servire.
